Saizeriya is an Italian family restaurant chain that operates both domestically and internationally, with the management philosophy of "proposing and challenging ourselves to provide valuable meals every day." We spoke to them about Tritan recycling and their efforts to help realize a sustainable society, a common goal shared by people around the world today.

Since the adoption of the SDGs at the United Nations Summit, various companies have begun to take steps to create a sustainable society. Could you tell us about the current state of SDGs in the food and beverage industry?

What about the ingredients?

[Mr. Gima] In order to procure ingredients stably and sustainably, our buyers travel globally, broadening their horizons. We have also been practicing vertical merchandising since our founding, and we are creating menus that make the most of our ingredients in order to reduce food waste at the production stage, factories, and stores.

I heard that a new system has been introduced. Could you please tell me the details?

[Mr. Gima] Restaurants in the food service industry have decided to separate the large amounts of wastewater they produce every day into a drainage layer called a Grease Shield, separating the residue and oil before discharging it. The previous drainage layer had safety, hygiene, and odor issues, and the gap between the dining area and the drainage layer created by burying it inside the kitchen placed a strain on employees.

To address these issues, we introduced the Grease Shield System, a compact, easy-to-operate automatic cleaning device that separates the residue and oil. We plan to roll this out to other companies in the future.

While the residue is discarded, the oil is recycled into hand-washing detergent for use in our stores, which we plan to start using soon.

How about the accessories?

[Mr. Yoneda] We believe that the SDGs are a major challenge that will lead to a transformation of the economic structure. Saizeriya supports the "3R + Renewable" concept and will incorporate it into its procurement policy.

For example, in February 2020, we began switching straws to biomass and PLA products, working to reduce the use of petroleum-based plastics. We also consider replacing broken and discarded glassware with Tritan products, which we consider to be a significant achievement.

Similarly, based on our commitment to resource conservation, we began introducing wooden tableware, which is less likely to break, in March 2021.

Since 2017, we have been collecting discarded metals from our stores and have recycled a total of 37 tons of aluminum to date. For reuse, we have been reusing unused ceramic tableware both domestically and internationally for the past two years, reusing 50 tons of tableware.

Please tell us more about the SDGs currently being implemented within Saizeriya through Tableware.

Please tell us the overall picture of Tritan™ tableware recycling.

[Mr. Yoneda] The circle system involves recycling used tableware into pellets, which are then molded into new products that are purchased and used in stores. Currently, we collect and recycle tableware twice a year (in spring and autumn) from stores across the country.

What prompted you to start recycling Tritan™?

[Mr. Yoneda] We started introducing new Tritan™ tableware in 2018. At that time, we discussed the idea of ​​reusing these when they became unusable. Tritan™ is a shatter-resistant material, but unfortunately some pieces become unusable due to scratches. As the amount was small, we started recycling them about a year later in 2019.

What applications are recycled Tritan™ products used for?

[Mr. Yoneda] We use them as slip holders. We chose them as products that customers would see, hoping that they would help raise awareness of our recycling efforts. We are also considering using recycled Tritan™ for trays, plates, and other items in the future.

What was the actual reaction?

[Mr. Yoneda] Initially, the motivation for introducing Tritan™ was to ensure safety and security for customers and reduce the workforce of employees, but even back then, employees had expressed the opinion that it was a waste to throw away unwanted glassware. I think that using resources effectively, as in this case, is easy to understand and will be well received. In addition, although it's not just Tritan™, each store needs to stockpile items for recycling until spring and autumn, and employees are highly conscious of recycling and proactively taking action. (Incidentally, since the introduction of Tritan™, there hasn't been a single injury caused by broken tableware.)

Please tell us about your future plans for the SDGs.

Please tell us what you envision for the future of Saizeriya and the message you would like to convey.

[Mr. Gima] Since 2016, we have revised our employee system and introduced a tiered wage system, and since February 2019, we have introduced a flat organizational structure, aiming to create an organization where individuals can maximize their capabilities. Our Waste Elimination Project Promotion Department is also working to improve energy efficiency. We haven't been promoting these activities until now, but our SDGs organization was officially launched on December 1, 2021, so we will gradually start communicating more about our activities to help people understand them.

Do you have any future plans for Tritan™ recycling, or any requests you would like to make to Nagase & Co.?

[Mr. Yoneda] I hear that the use of Tritan™ material is spreading in the restaurant industry.

I hope that increasing the number of companies in the industry who are involved in Tritan™ recycling will help improve the image of the entire restaurant industry.

Nagase & Co. is currently assisting us in the development of Tritan™ plates and tableware, and they have been extremely helpful in providing us with information on physical properties and laboratory verification. I hope that they will continue to support our analysis and development, including of recycled resins.

I would also be grateful if they could play a central role in the recycling business and promote sustainable initiatives for Tritan™ products, so that "Tritan™" becomes synonymous with recycling, just like PET and waste paper.

Nagase & Co. will continue to work hard to ensure that the Tritan™ recycling platform becomes widespread throughout the industry.
