We sat down with Mr. Tsuzuki of SARUTAHIKO COFFEE — a founding member of the company who now serves as Coffee Ambassador, sharing the story of specialty coffee and serving as a judge at prestigious competitions in the field.
He spoke with us about the philosophy behind "Happiness in every cup," the day-to-day work of building their cafés, their relationships with producers, and what lies ahead.
- On the Origins of the Philosophy
What inspired the idea of "Happiness in every cup"?
That phrase was born from a desire to deliver happiness through not just the taste of the coffee itself, but everything surrounding a cup of coffee — the time it gives you, and the human connections it creates.
In the middle of a busy day, you stop for just a few minutes, take a sip of something good. You exchange a few words with someone, or quietly gather your thoughts on your own. Those small moments have a way of lifting your spirit without you even realizing it.
Our founder, Otsuka, experienced this firsthand. During his years as an actor, there was a period when he was struggling with uncertainty about the future. Talking things through with someone over a cup of coffee made those feelings a little lighter. From that experience came the conviction that "coffee has a power beyond taste — it brings people closer together." That's where the phrase was born.
One cup can make a person right in front of you happy. That accumulation of moments — that's the chain of happiness we're working toward.
- On Creating the "Happiness" Experience
What do you prioritize in shop design, service, and staff training?
What matters most to us is warm, human communication — the kind that comes from genuine connection between people. Above all else, we want every staff member to engage with customers in their own words, not a script.
In how we design our shops, we hold the same core philosophy across all locations — "Happiness in every cup" — but each shop has its own concept. We study the culture and character of each neighborhood and constantly ask ourselves: "What can we do here, in this place specifically?"
When we started, we were a small coffee stand with interiors we largely built by hand. We weren't focused on efficiency — we valued the feeling that we were building this place together with our customers.
That hasn't changed. The guiding idea behind our service is still simple: make the person in front of you happy. No matter how many shops or staff we've added, that hasn't wavered.
- On Quality and Craftsmanship
Can you tell us about your relationships with producers and how you select your beans?
We visit farms in person. We see things with our own eyes, have real conversations, and only source beans we genuinely believe in. Our relationships with producers aren't transactional — they're personal. We've shared drinks and laughter together, and had serious business conversations, all in service of building the kind of trust where they genuinely want to send us their best beans.
Sourcing directly also means more of the revenue stays with the producers, supporting the kind of multi-generational farm operations we want to see continue. We've built trust with more than 30 farms across around 15 countries.
This isn't just raw material procurement — it's trade built on human relationships. And we believe that ultimately shows up in the cup. It's what underpins our uncompromising quality and consistency.
Our baristas competing at world championships — representing Japan on an international stage — is also part of this. We don't see that as individual success. It's a door opening from the shop floor to the world. People who grew up in our cafés go out and compete, then bring that experience back. That cycle is a vital part of what keeps our quality and our pride high.

The values we want to hold onto won't change over the next decade. As we grow, we want to keep nurturing each individual relationship with care.
Every shop, every neighborhood, every community — we want to keep asking what this particular place calls for and bring that to life. Tourist destinations, libraries, city streets — wherever we are, we want to create more spaces where people connect over coffee, where someone thinks "I want to come back here" or "I want to stay a while."
A single cup of coffee can bring happiness to a person in front of you. When those moments are shared again and again, they become the chain of happiness we hope to create.
